Koshimbir is Maharashtrian verison of salad. Its made with both raw and steamed veggies. This version uses raw veggies.
Ingredients :
- Onion : 1
- Tomato: 1
- Carrot: 1/2
- Cucumber/Zucchini : 1
- Roasted Peanut Powder : 2 Tblsp
- Salt : per taste
- Sugar : 3 tsps
- Lime Juice: 1/2 tsp
- Cilantro : 1 tsp
- Tadka : Oil, Mustard seeds, asafoetida, turmeric powder, curry leaves and green chilli
Instructions:
- Finely chop onion, tomato, cucumber /zucchini , carrot
- Note: We are using raw veggies here
- Add roasted peanut powder, salt, sugar.
- Make tadka and add it to the chopped veggies. This koshimbir is slightly sweet in taste so do not add too many green chillies in tadka.
- Mix well and adjust salt/sugar per taste .
- Add lime juice n chopped cilantro.
- Serve as a side dish :)
