Koshimbir


Koshimbir is Maharashtrian verison of salad. Its made with both raw and steamed veggies. This version uses raw veggies.

Ingredients :

  1. Onion : 1 
  2. Tomato: 1
  3. Carrot: 1/2
  4. Cucumber/Zucchini : 1
  5. Roasted Peanut Powder : 2 Tblsp
  6. Salt : per taste
  7. Sugar : 3 tsps
  8. Lime Juice: 1/2 tsp
  9. Cilantro : 1 tsp
  10. Tadka : Oil, Mustard seeds, asafoetida, turmeric powder, curry leaves and green chilli 

Instructions:

  1. Finely chop onion, tomato,  cucumber /zucchini , carrot 
  2. Note: We are using raw veggies here
  3. Add roasted peanut powder, salt, sugar.
  4. Make tadka and add it to the chopped veggies. This koshimbir is slightly sweet in taste so do not add too many green chillies in tadka.
  5. Mix well and adjust salt/sugar per taste . 
  6. Add lime juice n chopped cilantro.
  7. Serve as a side dish :)
