Cucumber Sambar


Ingredients :

  1. Toor daal : 1/2 cup
  2. Onion : 1 
  3. Tomato: 1
  4. Cucumber : 2 
  5. Garlic Cloves : 2
  6. Green Chillies : 3
  7. Turmeric Powder : 1/2 tsp
  8. Curry Leaves : 6
  9. Tamarind pulp: 2 Tblsp
  10. Salt: per taste
  11. Sugar : 1/2 tsp
  12. Sambar Powder: 2 Tblsps
  13. Red Chilli powder: 1 tsp
  14. Cilantro : 2 tsps
  15. Water : 1 n half cup
  16. Oil : 3 tsps
  17. Tadka : Mustard seeds (1/2 tsp),  Hing(Asafoetida) : a pinch, turmeric powder : 1/4 tsp, Curry Leaves : 5-6

Instructions:

  1. Chop cucumber, add it to Toor daal. 
  2. Add chopped green chillies to toor daal.
  3. Add a pinch of turmeric and water and Pressure cook the toor daal.
  4. In a wok/kadhai, heat oil and add tadka. 
  5. Once the tadka crackles, add lengthwise chopped onions , mashed garlic and fry.
  6. Then add chopped tomatoes and fry again for a couple of mins.
  7. Now add the cooked toor daal with cucumber pieces (mash the daal slightly before adding to the wok, without making the cucumber pieces into pulp)
  8. Add 1/4 cup water , Sambar Masala, Red chilli powder, salt, sugar and tamarind pulp.
  9. Mix and let it come to a boil.
  10. Check taste and add salt, red chilli powder or tamarind pulp per taste.
  11. Add chopped cilantro for garnishing.
  12. Serve hot with Rice n pickle !!
